Graham’s Honey Lemon Roasted Chicken

Andres Honey Lemon and Thyme roast Chicken

This is a favourite of ours for a Sunday but we don’t need an excuse to have it during the week. !

  • Honey lemon roasted chicken
  • My ingredients
  • 1.5 kg chicken
  • Butter (not much )
  • Salt and pepper
  • Finely grated zest of a lemon
  • 1 tablespoon of thyme leaves
  • 4 tablespoons clear honey

My method

Preheat oven to 200c/gas 6

Rub butter over the chicken liberally and season with salt and pepper ( I do this all in the baking tray to save mess ) .Roast for 40 mins .Remove from the oven and pour the juices into a bowl .

Mix the lemon zest,thyme and honey with juices in the bowl and return chicken to the oven . Baste 3 times in the next twenty mins four if u haven’t got kids at your apron strings ,on the twentieth min baste one final time . Turn off oven and leave chic in oven to rest for fifteen mins.

Take chicken from the tray and heat the juice with a little water( if necessary )these juices make an amazing gravy / juice to be poured /spooned over the chicken when sliced.

Compliment with either rice and vegetables or the full on roast potatoes and traditional veg it’s always great with any combo … Even chips !
